Cajun Style Fish and Grits
Start the new year with a warm, comforting Southern classic! 🌾🐟 Our Cajun-Style Fish & Grits is budget-friendly, full of flavor, goes great with left-over greens, and is perfect for chilly January nights.

Ingredients:

  • 3 tablespoons Cajun seasoning blend See our Guide to Spices
  • 4 catfish fillets
  • 4 tablespoons yellow mustard
  • 3 cups water
  • 1 cup milk
  • 1 cup yellow corn grits
  • 2 tablespoons vegetable oil
  • ½ cup green onion, chopped

Instructions:

  1. Wash hands with soap and warm water.
  2. Pat catfish fillets dry with a clean paper towel. Rub about ½ tablespoon of yellow mustard then Cajun seasoning blend on each side of the fillets and season to your liking. Wash hands after handling raw fish.
  3. In a medium pot, add water and milk. Heat over medium heat. Stir in 1 tablespoon of the Cajun seasoning blend. When the mixture starts to boil, slowly whisk in the grits. Reduce heat to low and simmer, stirring often, for 20-25 minutes or until thick and creamy.
  4. While the grits cook, add 2 tablespoons of vegetable oil to a large skillet over medium-high heat. Add catfish fillets and cook for 3-4 minutes per side, or until the fish flakes easily with a fork and is golden brown.
  5. Serve 1 cup of grits into each bowl or plate. Top with one catfish fillet.
  6. Sprinkle with green onions.
